Who is Keyma Vasquez?

Keyma Vasquez is a pioneer in the internationalization of Latin-American and Caribbean cuisine. When the chef decided to compete against her more experienced contemporaries in MasterChef Australia in 2022, little did she know that she would not only stand at par but also surpass them. One of the most beloved contestants of the season, Chef Keyma finished 4th whilst bringing an assortment of delicacies to the MasterChef table. We have added a few of them to the Nymble menu, one of which is Chicken Corn Chowder, traditionally known as Chupe de Pollo.

Chef Keyma’s recipes belong to a concoction of several cuisines. While her cooking techniques are majorly Latin American and Caribbean, the chef understands the nuances of how cultural exchange influences Latin American food. She continues researching and experimenting in this foray to sharpen her cooking aptitude. How to make Chef Keyma's Chupe De Pollo (Chicken Corn Chowder Recipe)

Chicken Corn Chowder or Chupe de Pollo follows a simple and easy-to-make recipe, so much so that it is almost surprising in its deliciousness. You can cook it within 30 minutes. Read through the recipe of Chef Keyma Vasquez’s Chupe de Pollo (for 6 servings).

Prep Time: 15 minutes

Cook Time: 30 minutes


  • ¼ cup butter
  • 1 large onion, chopped
  • 3 russet potatoes, peeled and diced
  • 3 skinless, boneless chicken breast halves, diced
  • 8 cups water
  • 2 cups frozen corn
  • salt to taste
  • ground black pepper to taste
  • ½ cup milk, or to taste
  • ½ cup chopped fresh coriander, more for garnish
  • 4 (1 ounce) pieces mozzarella cheese sticks, coarsely chopped

Cooking Directions

  • Melt butter in a pot over medium heat and sauté diced potatoes and onion.
  • After about 5 minutes, when they are tender, increase heat to medium-high and add chicken.
  • Once the chicken is cooked and white, add water.
  • Let the soup simmer before adding corn and coriander.
  • Bring it to simmer again.
  • Turn off the heat and season with salt, pepper, milk and mozzarella cheese.

Serve it hot and fresh. You can also beat eggs into the soup towards the end and/or top it with tortilla chips. Feel free to add your own touch!
